Category taxonomy: REST → GraphQL migration guide

In GraphQL, the REST Category response shape for taxonomy trees is exposed as TaxonomyIndustryCategory on CategoryTaxonomy.industryCategories. The separate IndustryCategory type (with mappings, isDefault, and taxonomy) is a different GraphQL type used on other paths.
